The Role
Reporting to the Food & Beverage Manager, this position is responsible for leading and the management of delivering a high level of service to members and guests across our 150-seat Restaurant, Club Bar and private dining room.
This is a full-time position which is required to be available to work a flexible roster which includes evenings and weekends as well as weekdays.
Key Responsibilities will include:
- Ensure that the experience provided to members and their guests is of the highest quality and is delivered professionally in line with the Clubs exceptional service standards.
- Assist members and guests during the dinner service with wine recommendations and selection for perfect pairing with their dinner, decanting of the wine and wine service.
- Provide people management, operational and admin support to the F&B Manager for the overall running of the Restaurant and Club Bar outlets.
- Ensure the POS system is accurate and up to date with current wine vintages and costings
- Implementing and maintaining processes, policies and structure to the Restaurant/Bar department with the focus on improving standards of service;
- Guide and work with F&B Supervisor to manage and develop direct reports including training and development, rostering to labour standards and responsibility for the output of staff within each department
- Ensure rosters are scheduled in accordance with the Club’s Enterprise Agreement, labour standards and forecasted business levels. Liaise with recruitment agency as required for staffing.
- Play an active part in the promotion of events, menus etc, with the aim of increasing revenue throughout Food and Beverage.
- Prepare various correspondence, reports or documents and ensure confidential matters are dealt with professionally
- Create and maintain a culture of open communication transparency, support and collaboration, ensuring staff behave in a manner which is reflective of Club Values. Lead by example in living our Purpose and values.
- Proven work experience as a Restaurant Manager working in a 5 Star Hotel or Fine Dining Restaurant
- Strong experience in managing and leading a team of up to 15 staff.
- Culinary school Diploma or Degree in food service management or related field, or equivalent training course
- Ability to develop a rapport and working relationship with all members and staff.
- Working knowledge of various computer software programs (MS Office, POS, Respak bookings software)
- Strong administration skills
- Up to date with food and beverages trends and best practices
- A strong knowledge of food and beverage pairings
- Solid understanding of pricing, budgets and cost controls
- A deep knowledge of wine and the ability to determine wine faults and maintain proper temperatures in order to showcase products at their maximum potential.
